This easy-to-make beef stew combines tender roast beef with a medley of diced carrots, potatoes, and green beans, simmered in a flavorful broth, resulting in a hearty and satisfying dish.
Ingredients
Instructions
In a large pot or Dutch oven, combine the diced carrots, diced potatoes, and canned green beans.
Pour in the beef broth into a small mixing bowl and add half a package of McCormick beef stew seasoning. Stir well to combine, and then pour over the vegetables.
Add Worcestershire sauce and tomato sauce to the pot, mixing everything together.
Microwave the Hormel pre-cooked roast with au jus for about 2 minutes, or until it’s soft enough to shred. Shred into smaller chunks and add it with the au jus to the pot.
Pour in 1-2 cups of water, depending on your desired consistency.
Place the pot on the stove over medium heat and bring the stew to a simmer.
Reduce the heat to low and let the stew cook for about 45 minutes, or until the vegetables are tender and the flavors have melded together.
Stir occasionally during cooking and adjust the seasoning if needed.
Serving Suggestions: Enjoy the beef stew on its own for a comforting meal, serve it over white rice for a classic pairing, ladle it over creamy mashed potatoes (a personal favorite), pair it with crackers for added crunch, or let your taste buds rejoice with a sprinkle of crushed potato chips on top (as per my husband’s suggestion).
